9-1-1 Cookie!

So, this is a take on my blog post from a while back entitled 3-2-1 Cupcakes! This time we are talking about   a single serve, microwave chocolate chip cookie. I can read your minds. It had to be chewy and bland with hard spots, right? NOT EVEN CLOSE! The original post title was 'Deep Dish Single Serve Chocolate Chip Cookie'. That was kinda long, although very descriptive.
This cookie was incredible. I cannot vouch for how it would be once it is cooled, but I do not think you have to be concerned about that, since it will not last long enough to find out! The cookie I made tonight was delicious. It was soft, warm, gooey, sweet, chocolate goodness! This is a must-try recipe. The 9 things you need I KNOW you will have on hand 99% of the time. This is great sweet-fix, easy-fix, end-of-the-day type indulgence. However, it would be very nice at any time of the day. After lunch, mid-night snack, for breakfast. You get the idea.
So here we go.
 So we see here the basic ingredients to some microwave magic. Flour, white sugar, brown sugar, melted butter, egg, salt, & vanilla. Oh and don't forget the chocolate chips! Not that we would, but still.
 First, melt 1 TB of butter in a measuring cup. Then add 1 TB white sugar, 1 TB brown sugar, a dash of vanilla and a pinch of salt. Toss in the yolk of one egg or 1 TB of egg beaters. Stir that all up with a fork and add 1 TB flour. Last but certainly not least, 1 TB of chocolate chips. So my TB was heaping, but that is probably beside the point. Let's say APPROXIMATELY 1 TB chocolate chips.
 When things are stirred together well, scrape the cookie dough into a dish that is microwave safe. It could be a coffee mug, or as in this case, a corelle-type baking dish. This might be what is known as a ramekin, but since I am not certian if shape plays into the term ramekin, I shall not use said term. Instead, the term 'microwave safe' is what I am going with. If you go with a coffee mug, cooking time could be affected.
 I did use a touch of cooking spray on my baking dish. Just lightly. I don't know that it was needed, but I did it anyway. I have an express setting on my microwave for 1 minute at full power. I hit that button and then watched closely what happened inside the microwave. At the 30 second mark, pretty much it was just the edges that were starting to bubble. The next ten seconds the whole top was bubbling. I stopped the microwave with 10 seconds left of the minute I had set it for. That was perfect for my microwave, but each microwave is different, so be careful the first time you cook one of these bits of heaven.

I just cannot tell you have yummy delicious it was! It was truly a perfect cookie. The texture was amazing. It was also enough to make for a BIG cookie. Just FYI. Think about places that sell individual cookies wrapped in saran wrap, the ones that are thin, but the size of a small plate? That is the amount you get here. I could see sharing it, assuming you can do so without arguing over who got more than their share. Make two, it is safer. Below is the recipe, enjoy!

9-1-1 Cookie!
Ingredients:
1 TB melted butter
1 TB White Sugar
1 TB Brown Sugar
1 egg yolk or 1 TB egg beaters
Dash of vanilla
Pinch of salt
1 TB flour
1 TB chocolate chips
TB measuring spoon

Directions: Melt butter in measuring cup or small bowl. Add sugars, vanilla, egg, salt. Stir well. Add Flour and stir again. Lastly, add chocolate chips. Stir once more. Scrap into microwave safe baking dish. Bake for approximately1 minute in your microwave. Watch cookie carefully, when top is completely bubbly, let bubble for no more than 3-5 seconds and remove from microwave. Let sit for 1 minute before eating.
